Beginning

I am just starting out. I am 6' tall and 208lbs. I want to at least be at 190 or less. What should I start on, should I incorporate the gym and how long do results usually take?

Loosing weight starts with your diet. As the saying goes, you can't outrun a bad diet.
In my opinion loosing weight is 70% diet, 20% working out and 10% mental will.
If just looking for loosing weight, cardio is your go to. You could start with with just walks to reduce strain to your joints and build the first muscles and stamina for more.

There's also workout programs like 30 Days of Cardio available in three flavors, light, regular and hard:

If looking for a more holistic approach that kinda addresses everything, there are programs like:
Baseline
or
Foundation (Light)

I'm gonna add in to the wonderful post by @Cathulhu above that you're looking at a more long term goal than a short one. Unless you are actively in talks to a medical provider who is monitoring your progress for safety, a lot of times you only want to loose a pound or two a week. And (particularly in the beginning) you want to make sure it's not just water weight. It's a frustrating fact that weight loss takes a while to make sure you don't accidentally loose muscle along with the fat.

That said, if you exercise with the dieting, you'll probably see changes in your body along with the scale. Which I've personally found more rewarding.

There is a benefit to this slow pace, though. It makes it more sustainable. You end up making life changes in small steps that allow you to continue that even once you hit your goal. Which is probably better in the long run anyways. (Pun intended.)
