Help, i'm afraid of injuring myself!

Hello guys! I'm Brad, I've been a Darebee user for years now but tbh the last few years I haven't been working out much. Pandemic was my peak, and now I want to exercise more often. I've started doing Scuba Diving courses and I'm resuming my downhill skateboarding journey, which is super exciting for me, but the issue is that I've had two knee injuries in the past where my menisci were involved.

There are 3 reasons why I want to work out again.
1. I need the strength and stamina for diving.
2. I need it for longboarding too.
3. My right leg feels like it's going to hyperextend at any time, and I work home office, so I barely move daily. Meaning I've lost way too much weight and muscle mass. My diet and eating habits are terrible; I don't eat much, and when I do, it's usually lots of carbs and animal protein, but no fiber.
I've already booked some medical appointments to get professional advice on this entire topic, but I'd like your help to know what would be some good workouts or programs to start again?
Today I did day 1 of "Legs and Abs of Steel" programs.

As with all workouts, especially when dealing with injuries, it would be a good idea to have a medical professional (doctor, physiotherapist) take a look and advise you on if there's any modifications you should do.
