Derek Simnett is pretty much my fave youtuber and vegan.

I had 1/2 a bottle of Pad Thai sauce and used some as the marinade, have with fried mushrooms and rice.

Preheat oven to 375F (convection oven works best - or use an air fryer!) and have a non stick baking sheet ready. 1. Drain and pat dry extra firm tofu. If the tofu is think, cut in half lengthwise. 2. On one side of the tofu, score it in a criss cross pattern (watch the video for details). 3. Marinade tofu in a small dish with marinade of choice, making sure to get marinade in the cuts on the tofu. Flip the tofu over and marinade other side. 4. Place tofu (scored side up) on a non stick baking sheet. 5. Bake for proxy 40-45 minutes (check after 30-35 minutes to make sure its cooking well and not burning!) or until golden brown and crispy on top.
