Stumbled on this a while back. It is essentially a banana omelette but don't let that put you off. It's a great lunch box filler.

It's best made 2 eggs to one banana. Mash them together and fry as thin as you like. I tend to serve mine with cinnamon and fresh strawberries.

It you use this ratio and serve in two batches then it's about 100 calories per portion.

I used this for my kids when they were starting solids. I like to swap out one banana for the approximate same amount of mashed sweet potato or butternut squash. Tones down the sweetness and gives a neat colour.
